Yes, avoid chimneys at all costs.
It sounds like the person you spoke with, was recommending the 8200 and that covers VHF low, which you don't need.
Eve mount is fine, if you're confident in it's durability.
Personally,if I didn't have towers, I'd use a tripod and reinforce it, from the underside.
