Internal "signal strength meters" don't measure signal strength. They usually measure the decodability of the digital signal. You can't amplify a digitally encoded signal and expect its digital data to change.

So is there a way to tell if my amp is helping other than using it and taking note of the amount of dropouts?

Nope, that's the only way without expensive test gear.
